Skirt Steak Fajitas

Ingredients:

2 tablespoons olive oil
¼ cup lime juice
1 clove garlic, minced
½ teaspoon ground cumin
½ teaspoon hot sauce
½ teaspoon salt
2 tablespoons chopped fresh cilantro
1 pound skirt steak
1 onion, sliced
1 teaspoon chili powder
1 red pepper, sliced
1 green pepper, sliced
salt and freshly ground black pepper
8 flour tortillas shredded lettuce, crumbled

Queso Fresco (or grated Cheddar cheese), sliced black olives, diced tomatoes, sour cream and guacamole for serving

Directions:

1. Combine the olive oil, lime juice, garlic, cumin, hot sauce, salt and cilantro in a shallow dish. Add the
skirt steak and turn it over several times to coat all sides. Pierce the steak with a needle-style meat
tenderizer or paring knife. Marinate the steak in the refrigerator for at least 3 hours, or overnight. When
you are ready to cook, remove the steak from the refrigerator and let it sit at room temperature for 30
minutes.

2. Preheat the air fryer to 400°F.

3. Toss the onion slices with the chili powder and a little olive oil and transfer them to the air fryer basket. Air-fry at 400°F for 5 minutes. Add the red and green peppers to the air fryer basket with the onions, season with salt and pepper and air-fry for 8 more minutes, until the onions and peppers are soft. Transfer the vegetables to a dish and cover with aluminum foil to keep warm.

4. Place the skirt steak in the air fryer basket and pour the marinade over the top. Air-fry at 400°F for 12
minutes. Flip the steak over and air-fry at 400°F for an additional 5 minutes. (The time needed for your
steak will depend on the thickness of the skirt steak. 17 minutes should bring your steak to roughly
medium.) Transfer the cooked steak to a cutting board and let the steak rest for a few minutes. If the
peppers and onions need to be heated, return them to the air fryer for just 1 to 2 minutes.

5. Thinly slice the steak at an angle, cutting against the grain of the steak. Serve the steak with the onions
and peppers, the warm tortillas and the fajita toppings on the side so that everyone can make their own
fajita
